Just in time for kids home from school, backyard barbecues and lazy afternoons, we've got a fun snack / dessert that's a hit with both kids and adults. Who doesn't love an ice cream cookie sandwich? Here's our Dessert In Five™! take on the classic treat. Start with our classic soft & chewy cookies - yes, they're on sale this month! Add a scoop of your favorite ice cream. Serve up a smile!

Bodacious Ice Cream Cookie Sandwiches

Shopping List
	1 dozen Sugar & Spice soft & chewy cookies
	1 pint ice cream
	decorative sprinkles
Yield: 24 servings, six cookies cut in quarters.

-Place 6 cookies face down on a tray

-Add a scoop of your favorite ice cream - 3-4 ounces is a nice amount. Use an ice cream scoop dipped in water to make this easy!

-Top with a second cookie.

- Press down so the ice cream is just about to the edges of the cookies.

- Using a knife, cut the cookie sandwich into quarters.

- Dip the edges of the sandwich with the exposed ice cream in the sprinkles to coat the ice cream.

Double chocolate chip cookies & cappucino ice cream

Oatmeal raisin cookies & caramel ice cream

Peanut butter cookies with dark chocolate ice cream

Serving ideas:

Choose 2-3 ice cream flavors - make sandwiches with each and serve a variety of flavors!

Make up all the ice cream sandwiches at once and freeze the extras. They make great last minute treats!

Spread the bottoms of the cookies with chocolate, caramel, etc before applying the ice cream. Delish!
